Polynesian Chicken Dinner Has Everyone Clucking
Anita began early on Saturday morning, decorating the clubhouse with Polynesian theme centerpieces for the tables. Everyone who came into the clubhouse knew that a treat awaited them for the evening festivities. After many trips to their cabin, Roger and Anita finally had all the ingredients in place for a fabulous activity. Supplies unloaded, offers of help rejected, and heat in the kitchen battled, our hosts fought the call of the outdoors to stay inside to make sure we would be entertained with food on Saturday night.
Guests were treated to Anita's first scrapbook of her experiences at the Ranch. She and Roger make sure our trials are expertly maintained so that they can enjoy the beauty of the Ranch, and view the wildlife that roams the acreage.
The smell of chicken cooking on the grill all afternoon caused everyone to work up a voracious appetite as the day progressed. While Anita slaved in the kitchen, preparing pineapple casseroles, Polynesian fruit cups, green beans and rice, Roger grilled the chicken on the patio outside. The coconut cakes Anita made prior to Saturday were a delicious finale to a scrumptious meal.
